Every family certainly has some of its own holiday dishes that are familiar and always popular. It could be an appetizer that goes with a bang accompanied by vodka, or a signature ceremonial dish that is prepared once or twice a year... But life does not stand still, and unusual combinations, new forms and dishes prepared on our holiday table are increasingly appearing fast, simple and tasty.

Ingredients:
600 g Chinese cabbage,
200 g crab meat,
4 eggs,
6 tbsp. soy sauce,
4 tbsp. vegetable oil,
2 tsp. sesame seeds,
2 tsp Sahara,
ground red pepper - to taste.

Preparation:
Beat eggs with 2 tbsp. soy sauce. Pour a little vegetable oil into a preheated frying pan, pour in the eggs and fry the omelette for 3-4 minutes on each side over low heat. Remove the finished omelette from the pan, add sesame seeds and a pinch of red pepper and fry for 1-2 minutes until fragrant. Combine sesame seeds, soy sauce, vegetable oil and sugar and stir until the sugar is completely dissolved. Cut cabbage, omelette and crab meat into thin strips and season with sauce.



Ingredients:

2 boiled beets,
4-5 cloves of garlic,
200-250 g hard cheese,
a handful of walnuts or prunes,
mayonnaise, salt - to taste.

Preparation:
Grate the boiled beets on a coarse grater, add salt, add 2-3 cloves of garlic, passed through a press, and mix with 2-3 tbsp. mayonnaise. Mayonnaise for this snack can be mixed with sour cream or cream. Add finely chopped nuts or prunes. Grate the cheese on a medium grater, add the remaining garlic and mayonnaise. 400 g boiled beef or veal,
4 onions,
200 g hard cheese,
6% apple cider vinegar,
mayonnaise mixed with sour cream in a 1:1 ratio.

Preparation:
Cut the onion into quarter rings and soak in vinegar for 15 minutes. Cut the meat into thin strips, grate the cheese and eggs on a coarse grater. Lay out in layers, pouring mayonnaise mixed with sour cream on each layer: onion (without vinegar) - meat - eggs - cheese. Decorate with greens.



Ingredients:

500 g beef liver,
4 onions,
2 carrots,
1 egg,
2 tbsp. flour,
½ cup milk,
mayonnaise, salt, ground black pepper, herbs - to taste.

Preparation:
Clean the liver from films and ducts, rinse well and cut into pieces. Grind the liver and one onion in a blender, then pour in the milk, add the egg and flour and beat until smooth. In a frying pan with a diameter of 20 cm, bake liver pancakes, frying them on both sides in vegetable oil for 2-3 minutes. Cool. Grate the carrots on a coarse grater, cut the onion into half rings. Fry the onions and carrots separately in vegetable oil, place in bowls and mix with mayonnaise. Assemble the cake, laying out layers: liver pancake - carrots - pancake - onions, etc. The top layer should be vegetables. Leave to soak in a cool place overnight. When serving, sprinkle with herbs.

Ingredients:
8 squid carcasses (preferably unpeeled),
4 eggs,
200 g cheese,
40 pcs. pickled champignons,
½ tsp. salt,
½ tsp. dried thyme.

Preparation:
Rinse the squids and boil one at a time in boiling salted water for 15-20 seconds. You can’t cook the squid any longer; it will turn rubbery. Place the squids in cold water, remove the skin and entrails and rinse. Trim the protruding parts of the squid, being careful not to damage the carcass, cut into small cubes and mix with eggs and cheese, also diced. Add salt and thyme and stir. Stuff the squid carcasses and place in the oven preheated to 220°C for 10 minutes. Ready squids can be served as a hot appetizer or cooled and cut into slices.

Ingredients:
300 g lightly salted trout or salmon,
250 g peeled boiled shrimp,
100 g crab meat (imitation),
½ avocado
3 boiled eggs,
1 tomato
1 cucumber
½ lemon (juice)
salt, ground black pepper, mayonnaise - to taste,
red caviar, soft cream cheese - for decoration.

Preparation:
Cut the crab meat into small cubes. Peel the boiled eggs, separate the whites from the yolks and finely chop. Cut the avocado into cubes and sprinkle with lemon juice. Also cut the tomato and cucumber into cubes. Cut the trout into thin slices using a sharp knife (ceramic knives do this job well). Lay out the salad in layers, coating each layer with mayonnaise and sprinkling with ground pepper: crab meat - cucumber - shrimp - whites - yolks - tomatoes - avocado. Also grease the top layer with mayonnaise and add a little salt. Then cover the entire salad with trout slices. Beat soft butter with a mixer, transfer to a cornet and decorate the top of the “cake”, placing patterns as desired. Garnish with red caviar.

Ingredients:
Ingredients for 6 molds with a diameter of 15 cm:
700 g minced pork,
1 large onion,
250 g hard cheese,
2-3 potatoes,
mayonnaise, salt, pepper, herbs - to taste.

Preparation:
Pass the minced meat through the meat grinder again, add salt and pepper and knead well. Cut the onion into small cubes, grate the raw potatoes and cheese on a coarse grater, and chop the greens. In greased molds, place the prepared products in layers: minced meat, onions, potatoes, cheese, pour over mayonnaise and sprinkle with herbs. Bake at 190°C for 30 minutes. Serve directly in the ramekins.

1 kg beef tenderloin,
1 egg,
500 g of ready-made yeast puff pastry,
salt, pepper - to taste.
For the sauce:
200 ml cream,
1 tbsp. mustard,
1 onion.

Preparation:
Cut the meat into large pieces 4-5 cm thick and fry in vegetable oil for 2-3 minutes on each side. Place on a plate, sprinkle with salt and pepper on all sides and let cool slightly. Divide the layers of dough into pieces equal to the number of pieces of meat, roll into strips 4-5 cm wide and 0.5 cm thick. Stir the egg with a fork, add a little salt. Brush the strips of dough with egg, place the meat on them and wrap. Brush the top of the dough with egg and place the pieces on a baking sheet. Place the baking sheet in an oven preheated to 180°C for 10-15 minutes and bake until the dough is ready. Meanwhile, prepare the sauce: finely chop the onion and fry in vegetable oil until transparent, pour in the cream, bring to a boil, add mustard, salt and pepper to taste and simmer a little over low heat until thickened.

Ingredients:
1 kg smoked brisket (choose one with more meat than lard)
2 packages of ready-made puff pastry dough (about 1 kg),
8-10 clove buds,
2 tsp Georgian adjika,
½ cup tomato ketchup.

Preparation:
Fold the thawed layers of dough and roll them out into a layer large enough to fit a piece of brisket. Mix ketchup with adjika and thoroughly rub the brisket on all sides. Stick in a clove. Place the brisket on the dough, fold the edges and pinch the seams so that the juice released during baking does not leak out. Place in a greased baking dish and place in the oven preheated to 180°C for 15-20 minutes. The dough should be well browned. Serve the dish hot with fresh vegetables and sour cream sauce.



Ingredients:

1 chicken (preferably chilled)
150 g ham,
150 g hard cheese,
2 eggs,
2 sweet red peppers,
1 bunch of greens,
1 tsp dried rosemary,
50 breadcrumbs,
salt, ground black pepper.

Preparation:
Remove the skin from the chicken carcass, being careful not to tear it. When removing the skin, leave the drumsticks and wings intact, cutting them off at the joint. Remove all the meat from the bones and pass through a meat grinder. Cut the cheese, ham and bell peppers into small cubes and combine with the minced meat. Add chopped herbs, breadcrumbs and eggs, salt and pepper to taste. Sew up or secure with toothpicks the hole at the neck on the skin, stuff the skin with the resulting minced meat and sew up the belly. Place on a greased baking sheet. Mix vegetable oil with rosemary and rub the surface of the chicken with it. Bake at 180°C for 1.5 hours, basting the chicken with the juices released every 20 minutes.

To roast, take the meaty part of the hind leg of the pork, trim off the excess fat, leaving a thin layer, and using a disposable syringe with a thick needle, inject a strong saline solution into the thickness of the meat - syringe. Place the meat in a frying pan greased with mayonnaise, salt, pepper and coat with a thick layer of mayonnaise. There is no need to lubricate the places where lard remains. Place in the oven, preheated to 200-220°C, and bake until done. Check readiness by piercing the thickness of the meat with a thin long knife - if the juice that comes out is clear, the meat is ready. Remove the pan from the oven, transfer the meat to a plate and scrape off the mayonnaise. Cover the meat with foil and let cool.

8 pieces of loin,
4 oranges,
2 lemons,
1 tbsp. liquid honey,
2 tbsp. dry mustard,

Preparation:
Squeeze juice from oranges and lemons. Prick pieces of meat in several places and place in a mixture of citrus juices for 12 hours. Mix mustard, honey and 4 tbsp. water. Remove the meat from the marinade, rub with the honey-mustard mixture and fry in hot vegetable oil on both sides until golden brown. Place in a baking dish, sprinkle with salt and pepper and pour over the remaining marinade. Cover the pan with foil and place in the oven at 180°C for 40 minutes. Then remove the foil and brown the meat for 10 minutes.

Ingredients:
8 tilapia fillets,
1 tbsp. coriander beans,
1 tbsp. vegetable oil,
2 lemons (juice),
salt.

Preparation:
Pour salt and coriander grains into a mortar and crush, then add 1 tbsp. vegetable oil and stir. Rub the tilapia fillet with the resulting mixture and place in a dish greased with vegetable oil. Place in an oven preheated to 180°C and bake for 20 minutes. When serving, sprinkle with lemon juice. Side dish - boiled fluffy rice or mashed potatoes and lots of fresh vegetables.

Ingredients:
900 g salmon steaks (3 large pieces),
150 ml soy sauce,
3 tbsp. Sahara,
3 tsp sesame seeds,
3-4 cloves of garlic,
1 tsp ground red pepper.

Preparation:
Split salmon steaks down the spine and remove all bones. Place the fish skin side down in a baking sleeve, release the air from it and tie the ends, leaving 15 cm on both sides. Place the sleeve on a baking sheet and place in the oven preheated to 200°C for 10 minutes. Meanwhile, prepare the sauce: pour soy sauce into a frying pan, add sugar, red pepper, sesame seeds and garlic, crushed with a knife blade, stir, bring to a boil and simmer for 5-7 minutes until thickened. Strain the finished sauce through a sieve. Serve the salmon with the sauce. For garnish, prepare steamed broccoli and boiled rice.

Ingredients:
1 kg fillet of any white fish,
400 ml 35% cream,
2 eggs,
200 g grated hard cheese,
salt, ground black pepper - to taste.

Preparation:
Place the fish fillet in a dish greased with vegetable oil, salt and pepper. Whisk the cream with the eggs, add finely grated cheese and pour the fish into the mold. Bake at 180°C for 20 minutes.

Ingredients:

250 g flour,
¼ tsp. baking powder,
4 tbsp. cocoa powder,
115 g sugar,
2 eggs,
150 ml odorless vegetable oil,
150 ml milk.
Cream:
1 tsp instant coffee,
1 tbsp. water,
300 ml 35% cream,
2 tbsp. powdered sugar.

Preparation:
Sift the flour into a bowl, add cocoa powder, baking powder, sugar, eggs, milk and butter. Mix with a mixer and divide into 2 parts. Pour the dough into 2 molds and place in an oven preheated to 170°C for 5-7 minutes (if the oven is small or there is only one mold, bake the cakes one at a time). Cool. For cream, dissolve coffee in water. Whip the cream with powdered sugar until thick, pour in the coffee and beat a little more. Place the first cake layer on a flat dish, place half the cream on it, place the second cake layer and brush everything with the remaining cream. Sprinkle with grated chocolate and refrigerate overnight. The next day, almost all the cream will be absorbed into the cakes, turning the cake into the most delicate delicacy.

Next, mash 1 canned cod liver, combine with your favorite cheese (quantity as desired) and finely chopped herbs (dill/parsley). Add 5 tbsp mayonnaise sauce. Spread mixture onto baguette slices. Serve to the table, first sprinkled with herbs.

Preparation:

The salad consists of the following layers, each coated with mayonnaise:

Chicken fillet cubes;
coarsely grated boiled carrots;

Preparation:

Rinse half a glass of rice. Then put it in boiling water for 20 minutes. Keep a small cabbage fork in hot water for 3 minutes. Remove and separate into leaves. Sauté an onion, carrots, 5 champignons and a clove of garlic in 2 tablespoons of oil. Then grind 300 grams of chicken fillet in a meat grinder. Then mix with salt, fried vegetables, rice and spices.
